Chef Mana’s Kitchen: Nutty Fruity Granola
INGREDIENTS
½ cup chopped walnuts
½ cup chopped hazelnuts
½ cup raw pumpkin seeds
3 cups old fashioned rolled oats
1 cup wheat bran
½ cup grapeseed or canola oil
1 cup wild flower honey
¾ cup raw almond butter
1 cup chopped dates
1 cup dried cranberries
1 cup chopped dried apricots
DIRECTIONS
Preheat oven to 275 F, and line a baking sheet with parchment paper.
In a small bowl, whisk together the oil, honey, and almond butter.
In a large bowl mix the walnuts, hazelnuts, pumpkin seed, rolled oats, and wheat bran. Toss with honey mixture until well coated. Place on the baking sheet and bake for 50 minutes with stirring it twice while baking.
Let cool for 10 min and toss with the dried fruit.
Store in an airtight container.

Chef Mana’s Kitchen: Pistachio Butter Stuffed Leg of Lamb
INGREDIENTS
1 cup 2 Tbsp Hoisin sauce (found in Asian markets)
1 Tbsp chili powder
2 cloves garlic, minced
3 Tbsp sesame oil
1/3 cup fresh mint, chopped
1 ½ Tbsp kosher salt, separated
½ tsp ground black pepper
1 ½ cups pistachio butter
3 Tbsp water
½ tsp good quality Dijon or whole grain mustard
1 (5 to 7 lbs) boneless Leg of lamb
DIRECTIONS
o Preheat oven to 350 degrees
o Trim access fat off the lamb, butterfly, pat dry, and season with ½ Tbsp salt and half of the ground black pepper.
o In a mixing bowl, combine hoisin sauce, chili powder, minced garlic, sesame oil, chopped mint, and the remaining of salt and black pepper. Divide this mixture in two halves. Mix the first half with pistachio butter and spread over the lamb.
o Roll the lamb to form a log, tie with a butcher’s twine, and place over a wire rack on a baking sheet. Cover with foil and cook for about 50 min or until it reaches 145 degrees F for medium well.
o Meanwhile, combine the second portion of the hoisin sauce mixture with water and mustard to make a sauce, and set aside.
o When lamb is ready, uncover and broil to desired crispiness. Let rest for about 10 min, and cut to desired portions.
Bring the sauce to a boil, whisk and serve over lamb.
